I really haven’t been able to get enough pumpkin this fall. One morning I was craving oatmeal and pumpkin so I did a search. This is what I came up with.
It’s good for a breakfast or just a snack.
INGREDIENTS
2 C old-fashioned oats
¼ C Honey
¼ C water
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
¼ C pumpkin puree
DIRECTIONS
- Preheat oven to 325.
- Combine all ingredients in bowl. Stir well.
- Place on a baking sheet and spread with a spatula.
- Bake for 25-30 min. Check after 20 and stir if needed.
- Granola will continue to crisp after it’s removed from the oven.
